Mother Earth says…

“Live on Less and Love It.” I came across this article and am impressed with the author’s 75 ways to spend less and be happier. His tips cover a lot: food, home-care, transportation, purchases, education, entertainment, and travel. I posted the Mother Earth News link in the “Neighbors of Sorts” list to the right.

Thank you so much for the link to this article! I read every single tip, and they are really something I need to hear. I can be quite frivolous with money...

I'm going to Whole Foods tomorrow actually, and I'll fill out one of the comment forms there to request they carry your vegan flavors (you guys should make a vegan mocha chip flavor - yum!). It'll be the first time I've been back to the one near my university since December, so we'll see if they answered the last request I made for another product.

There's a recipe for vegan Blueberry Coffee Cake in the cookbook Vegan with a Vengeance, which they carry in practically any Borders or Barnes and Noble bookstore. Everything I've tried from this book is fabulous, and it also has recipes for Lemon Corn Waffles with Blueberry Sauce and Blueberry-Corn Muffins (delicious). Have fun at your breakfast reunion!

Leah, I found the Coffee Cake recipe online:

http://theppk.com/recipes/dbrecipes/index.php?RecipeID=123

It's identical to the one in her cookbook except she omitted the berries on her website - all you have to do is add two cups frozen blueberries straight from the freezer after you mix the wet and dry ingredients!

Informative Mother Earth Article, I am going to make small changes more frequently. This weeks change we be to stop buying Organic Canned Beans at my local coop Greenfields Market and cook my beans from scratch. There are 3 advantages, first I will eliminate the cans used for my bean consumption, secondly I will save a lot of money and lastly I can cook up a large quantity of beans at once, not only saving energy, but also freezing beans to be used later.
